Trip to Modica to make chocolate.

Yesterday, yep finally caught up and writing about current stuff, we drove down to Modica to watch how they make their workd famous chocolate. Modican chocolate is an Aztec tradition that was handed to the spanish, and then to the sicilians. So what makes it different. Lots. First it’s made with zero milk. Not a drop. When the cocoa and sugar are mixed they heat until the cocoa melts, which is lower than the sugar, so the sugar never melts, and remains crytalized. Which, as you could guess leaves the chocolate “gritty”. It’s definately a strange experience when you first bite it and it crumbles in your mouth, but if you chew it slowly, and savor the flavors, the heat in your mouth will melt and mix the sugar, so you get the bam of the cocoa, then the smooth sweet sugar flows in later. It’s odd, but I’ve learned to really enjoy it.
We went to this confectionairre in Modica, with Adam and Paula’s clan, who let us behind the counter to watch first hand the process. The kids loved it, they got to sample the chocolate before and after, and watch the “chef” make bars of this Modican Delight. Of course there was time in teh gift shop afterward to buy bigger bars and other nice pastries. It was a great trip and a chance to see real Sicily. Definately far from the jelly belly tour in California. One more thing that Sicily does differently from the states. How many any kind of shops in the US, would let 2 big families fome in off the street, with no prior planning to watch in the kitchen how things are done.
